Making Deer Snack Sticks

The method used for making deer snack sticks is identical to making ground deer jerky, except for one thing. The seasoned, ground deer meat is formed into long rounds, about one-half inch in diameter instead of into flat strips.

The ground venison is first mixed with salt and Tender Quick® curing mix, and then held in the fridge for a couple of days to cure. After curing, the meat is seasoned with spices, herbs and other flavorings, mixed well one more time, then formed for drying. The best way to make well formed deer snack sticks is to use a jerky shooter. It will make perfect long round strands of your seasoned, ground venison that'll dry evenly in the dehydrator or the oven.

Deer Snack Sticks Recipes

I've made a few deer snack sticks in my day. Here are a few of the recipes I've tried and enjoyed.


Basic Venison Snack Sticks

This ground deer snack sticks recipe is lightly seasoned with garlic and cayenne, plus includes a bit of liquid smoke to give it a hint of smoke flavor. You can substitute onion powder for the garlic powder for a milder taste.

5 pounds of ground venison
2 tablespoons of canning salt
1-1/2 teaspoons of Tender Quick®
1-1/2 teaspoons of Accent® seasoning
2 tablespoons of liquid smoke
4 teaspoons of garlic powder
1 teaspoon of cayenne pepper powder

Combine the salt, Tender Quick® and Accent® with the ground deer meat. Knead the meat thoroughly to mix in the salt mixture. Place the meat in the refrigerator for two days, mixing well twice each day. Before mixing for the last time, add the remaining ingredients. Mix very well,then form into rounds and dehydrate.


Winter Warmer Deer Snack Sticks

To keep you warm when it's chilly outside, spicy food can help. This deer snack sticks recipe contains cayenne AND red pepper flakes to give a nice flavor and a nicer heat level. Adjust the amount of pepper added to suit your taste buds.

5 pounds ground venison
2 tablespoons of canning salt
1 1/2 teaspoons of Tender Quick®
1 1/2 teaspoons of Accent®
2 tablespoons of cayenne pepper
2 tablespoons of red pepper flakes
1 tablespoon of black pepper
1 teaspoon of allspice

Combine the ingredients and dehydrate, following the direction in the above section, "Making Deer Snack Sticks".

Garlic Flavored Deer Sticks

If you really, really like the pungent flavor of garlic, I think you'll like this recipe. These garlic snack sticks are a tribute to full flavored garlic pleasures. I bet they'd go over big in Gilroy!

5 pounds of deer burger
2 tablespoons of salt
1 1/2 teaspoons of Tender Quick®
1/4 cup of Worcestershire sauce
3 tablespoons of garlic powder
2 tablespoons of onion powder
1 tablespoon of black pepper
1 teaspoon of celery salt

Combine the ingredients as in the other recipes.


Maple Deer Snack Sticks

This recipe contains the flavor of maple syrup to make a sweet tasty snack stick. Use the real maple syrup for this one. It'll be worth the extra cost.

5 pounds of ground up deer meat
2 tablespoons canning salt
1 1/2 teaspoons Tender Quick®
1 1/2 cups of maple syrup
1/4 cup brown sugar
1/2 teaspoon ground ginger
1/2 teaspoon of cinnamon
